I’ve been mostly gluten free (I indulge occasionally) for two years now, at the suggestion of a doctor that I trust. I’m not sure that I would have reached this decision on my own because I don’t always notice the effect of gluten on my system. These days, on occasions when I’ve decided to eat gluten for a day or two, I’ll notice that I end up feeling a little bloated, but this is not something that I was always attuned to. I’m still not sure if I’m developing a sensitivity where there wasn’t one before, or if I’m simply learning to read my body better.
